Can I cook a roast half today and half tomorrow?

Im slow cooking a pot roast in a crock-pot. The recipe calls for 10-12hrs of cooking in the crock pot. I work all day. Can I cook the roast in the pot for 5 hours today, then put it in fridge and then cook the rest tomorrow?
